Ingredients

Dry ingredients:

  • 2 boxes Jiffy Corn Muffin Mix
  • 3 tablespoons baking powder
  • 2 cups dry baby cereal

Wet ingredients:

  • 2 eggs and shells puree in blender
  • 4 ounce jars baby food (4 1/2jars) 2 jars of sweet potatoes or squash or mixed veggies or carrots 1 jar of fruit 1 jar of chicken or turkey with rice or veggies or noodles. (Any of the baby food fruits and veggies can be used but check the label and choose those with high Vitamin A content.)
  • 3/4 cup national brand peanut butter

Other ingredients:

  • 1 1/2 cups shredded/finely-chopped carrots or broccoli

Instructions

  • Preheat the oven to 400℉
  • Mix wet and dry ingredients separately
  • Combine wet and dry ingredients
  • Add 1 ½ cups of shredded or finely chopped carrots or broccoli to the mix
  • The mix will be heavy and stiff. Do not add liquid or it won’t rise properly
  • Spray a mini muffin pan with cooking spray, put the dough in the pan and bake for about 15 minutes (check for doneness) in a 400℉ pre-heated oven
  • Cool on a rack, freeze in single layer in gallon size plastic baggies
  • Thaw mini muffins in the microwave when ready to serve.

Notes

Optional Additions: chopped nuts, toasted soybean bits, shredded low fat cheese, dried fruit (small pieces), shaved cuttlebone, toasted sunflower kernels, pureed bananas, pureed beans (reduce baby foods by one jar ), peeled, pureed fresh mango, papaya or kiwi (reduce number of jars of baby food).
