Equipment

Ingredients

  • 3-4 lbs chuck roast
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Accent (MSG)
  • 1 tsp parsley
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.7 oz Italian dressing mix 1 packet
  • 3 cups beef broth or Au Jus packet with 3 cups water
  • 4 pickled peppers banana or pepperoncini peppers
  • 1/4 cup juice from pickled peppers
  • 2 tbsp Giardiniera optional
  • 3/4 cup red wine 1 mini bottle
  • 2 tbsp olive oil

Instructions

  • Season roast with salt and pepper.
  • Sear roast in crock pot with torch or in skillet. In the crock pot with a torch is preferred so you don't lose any juices. The point is to create flavor with the <a href="https://en.wikipedia.org/wiki/Maillard_reaction">Maillard reaction</a>, not to cook it.
  • Place roast in crock pot (if it’s not there already)
  • Add the rest of the ingredients (optionally mix in other bowl first)
  • Cook on low until shreddable, about 8-10 hours
