Peanut Chicken (Satay)
Ingredients
- 1 lb boneless chicken breasts cut into 1" cubes
 - 1/3 cup peanut butter
 - 2 tbsp soy sauce
 - 2 tbsp white vinegar
 - 1 tsp lime juice
 - 2 cloves garlic
 - 1/2 tsp sesame oil
 - 1/4 red pepper flakes
 - 3 tbsp hot water or brewed tea
 
Instructions
- In a medium bowl, combine peanut butter, soy sauce, vinegar, lime juice, garlic, sesame oil, and red pepper.
 - Blend in hot water or tea.
 - Add chicken; toss to coat.
 - Thread onto skewers (kebobs).
 - Grill until cooked through.
 - Serve with rice noodles and cucumber salad
