Ingredients

  • 3/4 cup whole milk (185g) warm to 90F
  • 2 1/2 teaspoons instant yeast (10g)
  • 3 1/8 cups all-purpose flour (469g)
  • 1 1/2 teaspoon fine sea salt (5g)
  • 3 1/2 tablespoons granulated sugar (50g)
  • 1 egg yolk
  • 2 whole eggs
  • 3 tablespoons unsalted butter (42g) softened
  • sesame seeds *Optional* Un-toasted for topping

Instructions

  • In small bowl, mix warm milk and yeast to bloom.
  • Add flour, salt, and sugar to large mixing bowl; mix dry ingredients.
  • Add yeast/milk mixture to dry ingredients in large mixing bowl.
  • Add eggs and yolk to the large mixing bowl; mix for a couple minutes.
  • Add softened butter; mix for a couple more minutes .
  • Place dough in large greased bowl to proof. Allow to double in size.
  • Punch down the dough.
  • Portion into 100 gram balls.
  • Place dough balls on pan; allow to proof for 30-45 minutes.
  • Preheat oven to 375°
  • Brush with egg wash.
  • Bake at 375° for 16-20 minutes
