Hamburger Buns
Ingredients
- 3/4 cup whole milk (185g) warm to 90F
- 2 1/2 teaspoons instant yeast (10g)
- 3 1/8 cups all-purpose flour (469g)
- 1 1/2 teaspoon fine sea salt (5g)
- 3 1/2 tablespoons granulated sugar (50g)
- 1 egg yolk
- 2 whole eggs
- 3 tablespoons unsalted butter (42g) softened
- sesame seeds *Optional* Un-toasted for topping
Instructions
- In small bowl, mix warm milk and yeast to bloom.
- Add flour, salt, and sugar to large mixing bowl; mix dry ingredients.
- Add yeast/milk mixture to dry ingredients in large mixing bowl.
- Add eggs and yolk to the large mixing bowl; mix for a couple minutes.
- Add softened butter; mix for a couple more minutes .
- Place dough in large greased bowl to proof. Allow to double in size.
- Punch down the dough.
- Portion into 100 gram balls.
- Place dough balls on pan; allow to proof for 30-45 minutes.
- Preheat oven to 375°
- Brush with egg wash.
- Bake at 375° for 16-20 minutes
