In a medium bowl, whisk dry ingredients together, and then stir in the cherries.
Add in the whipping cream & almond extract, stirring until as well combined as possible.
Dump mixture onto parchment paper and continue mixing by hand just until the dough holds together well, don’t over mix as that will make them tough. (Cream consistency varies-you might need to add more cream to get the dough to hold together properly).
Shape into an approx. 8” circle, 3/4 to 1” thick.
Cut circle into 8 pcs. using a pizza cutter, and pull slices apart slightly with a frosting spatula.
Sprinkle tops with raw sugar or leave plain and drizzle with icing after baking.
Bake at 375⁰ for 18-20 minutes.
Cool slightly and serve.
