Apple Crumb Cake

Ingredients

  • 2 1/2 Cups Flour 1 1/2 tsp. Baking Powder
  • 1 1/2 Cups Brown Sugar 1 Cup Milk
  • 2 tsp. Cinnamon 2 Eggs room temp
  • 3/4 Cup Butter softened
  • Optional- 1 Cup Chopped Fresh Apple
  • 1/2 Cup Chopped Pecans
  • Powdered Sugar or Vanilla Icing

Instructions

Cake

  • Grease a 9×13 Pan, set aside. Preheat oven to 350°.
  • Whisk together the flour, brown sugar and cinnamon in a medium sized bowl.
  • Cut in the softened butter, with a pastry cutter, until mixture looks crumbly. (This can be accomplished in mixer using wire whisk attachment- but be careful not to overmix)
  • Remove 1 cup of the crumbs, and set aside. Add in the baking powder, milk and eggs, and mix until just combined.
  • Stir in apples if using.
  • Scrape batter into prepared pan, and level out.
  • Top cake with reserved crumb mixture.
  • Sprinkle with pecans if desired.
  • Bake cake for 34-45 minutes, or until it tests done.
  • Dust cooled cake with powdered sugar or drizzle with icing.

Vanilla Icing

  • Stir together; 1 c Powdered Sugar, 1/2 tsp vanilla and enough water to bring to desired consistency.
  • Fill zipper sandwich bag (that is placed into a short glass, with bag top stretched over top of glass) with icing.
  • Close bag, snip corner, and drizzle icing over top of cooled cake
