Preheat oven to 350°.
Lightly grease 9×13 baking pan, set aside. In a medium bowl, whisk dry ingredients together, set aside.
In mixer bowl, cream together butter and brown sugar. Add vanilla and eggs, and mix well, scraping bowl as needed. Gradually add flour mixture and mix until well combined, again scraping bowl as needed.
Remove bowl from base and manually stir in apples, batter will be very thick.
Spread mixture evenly in pan and sprinkle with butterscotch chips. Bake 35-40 minutes, or until golden brown. Allow to cool before cutting.
