Mississippi Pot Roast
Ingredients
- 3-4 lb boneless beef roast your choice of cut (chuck, sirloin tip, rump)
- 1/2 cup butter 1 stick
- 1 package au jus gravy mix
- 1 package dry ranch dressing mix such as Hidden Valley
- 5 Pepperoncini peppers more or less depending on preference
- 1/4 cup Pepperoncini juice
- Salt and freshly ground pepper if desired
Instructions
- Season roast with salt and pepper if desired.
- Sear roast in crock pot with torch or in skillet. In the crock pot with a torch is preferred so you don't lose any juices. The point is to create flavor with the Maillard reaction, not to cook it.
- Put the roast in a slow cooker.
- Add the butter, au jus gravy mix, ranch dressing mix and pepperoncini peppers and juice.
- Cook on low until tender, about 8 hours.
